This almond butter oatmeal chocolate chip cookie bars recipe is the perfect bar recipe when you need something decadent, yet a bit on the healthy side. This chocolate chip cookie bar recipe has whole grains, no refined sugar, and is gluten-free! They've got plenty of chocolate chips tucked away to fill that sweet craving you might have.

Using whole grain ingredients in this cookie recipe takes this recipe to a whole new level of goodness. Some of the ingredients you will need for this bar recipe include coconut sugar, almond butter, pure vanilla extract, oat flour, rolled oats, and aluminum free baking powder. You will also need fine sea salt, unsweetened almond milk, and dark chocolate chips.

To start the cookie recipe preheat your oven to 350 degrees Fahrenheit. Then line an eight by 8-inch square pan with parchment paper. Then in a medium sized mixing bowl, cream together the coconut sugar, almond butter, and vanilla on high for approximately one minute using a stand or hand mixer with a paddle attachment. Then in a small mixing bowl, whisk together the oat flour, baking powder, rolled oats, and sea salt. Place the bowl next to the mixer. Then with the mixer off, add in the oat flour mixture. Then pour in the almond milk over the oat mixture and begin beating the mixture on low and increase the speed to medium.

Then beat for another 15 seconds or until incorporated. Make sure to not over-mix. The cookie dough recipe should pull together into large, moist mounds as it moves around the mixing bowl. Then add the chocolate chips and stir to incorporate. Transfer the cookie dough to the lined pan and use your fingers to press the mixture evenly into the bottom. You will think there is not enough cookie dough, but keep pressing it outward until it's nearly touching the sides of the pan. If you'd like you can also dot the top of the cookie dough with another tablespoon or two of chocolate chips. Then bake the cookies for approximately 22 to 26 minutes or just till the edges of the bars are golden and a toothpick inserted into the center comes out mostly clean. Make sure to not over-bake. Then let cool completely in pan. Then, with the edges of the parchment gently remove the bar from the pan. Slice into bars. You can store the chocolate chip cookie bars in the pan at room temperature or in the refrigerator.
