Sometimes you just need a good soup for some comfort food, and to warm you up on a super cold or even just a chilly day. Soup is one of those great things that you can just make with whatever ingredients you have on hand. Soups have long been around and known for being a great way to combine a bunch of ingredients into one big pot, let it all simmer together and then have an amazing finished product that will be able to be enjoyed by a crowd of people. Soups are great to make bug batches of as well, you can make a big batch of any type of soup and just freeze it in your freezer to have whenever you need it. You can even freeze it in to go containers so that you have it all ready to go in a container when you want to take soup on the go. That way it is the perfect lunch that you can just heat up in the microwave!

You could try and make this Baked Potato Soup with Bacon more healthy by cutting some of the fat out of it. You could go about doing this by using some yogurt instead of sour cream, or a lower fat milk or plant based milk, like almond, coconut, soy or rice milk. This is probably what I would use, since I just prefer those things over the sour cream and milk. So you could really tweak this recipe to your tastes and preferences if you like, even add some different spices. Otherwise, it is a wonderful recipe as is, with all of the fat in it. It would totally be the perfect fall or winter time soup that will give you some sustenance to keep you warm throughout the day. Awesome to bring to a potluck or make for a dinner you are hosting too as a starter, or even as a main course! Try this soup this fall when things start to get a bit more chilly.
