Poke cake...So just what is that? Well it is pretty much what is sounds to be. You make a cake, any kind. You poke holes into the baked cake. You then pour either a pudding, jello, syrup of sauce into the holes so that it absorbs into the cake and makes it extra yummy!

For those of you that love the sound of this dessert but are not keen on using cool whip,we will give you the instructions to make stabilized fresh whipping cream which is what I always prefer to use in any recipe that calls for cool whip. Pudding is very easy to make from scratch as well, so for those that prefer, you can always substitute that as well.

Here is a recipe for stabilized whipped cream:

1 teaspoon unflavored gelatin, 4 teaspoons cold water,1 cup heavy whipping cream, 1/4 cup confectioners' sugar

Using a small saucepan, combine the gelatin in the cold water. Place over low heat, stirring until gelatin dissolves. Remove from heat and allow to cool but not set. Whip the cream and confectioners' sugar until soft peaks form, add the gelatin, whip until stiff peaks form. (Makes about 2 cups).

Fresh bananas are sliced and served with this dessert, but for those of you that plan to make and serve it the same day, you could slice the bananas and put a layer of them on the pudding layer, just before the whipping cream or cool whip topping.
