You won't need a lot of ingredients for this easy to do sandwich recipe, just some Italian hero bread, some Broccoli Rabe, some slices of mozzarella, some sun dried tomatoes that have been cured in live oil, garlic and mint and some extra virgin olive oil. To make the sandwich recipe, you just need to cut the bread in half lengthwise, and add a nice layer of saut�ed broccoli rabe. Then add some slices of mozzarella, then follow by some sun dried tomatoes. Finish the sandwich with a nice drizzle of extra virgin olive oil.

For this sandwich recipe you will need to prepare the recipe for the Broccoli Rabe before you make the sandwich. For broccoli rabe you will need some broccoli rabe (rapini), some lightly toasted pinoli or pine nuts (optional), some olive oil, some chopped garlic cloves, and some red pepper flakes. Then you will need to bring a large pot of salted water to a boil. While the water is getting ready to boil, trim the broccoli rabe of its large woody portions on the stems, and place the broccoli bunches into the boiling water. Then blanch the broccoli rabe just until the broccoli is crisp tender, only about two to three minutes for each bunch. Then when done, transfer the broccoli rabe to a large bowl of ice water so it can cool. Reserve some of the cooking liquid. Then heat up some olive oil in a heavy large skillet set over medium heat, adding the garlic and red pepper flakes, and salute just until the garlic is golden. Then after reducing the heat to medium low, add the broccoli and mix it till coated. You can add some of the reserved cooking liquid, and cook the broccoli until it is heated through and the stems are cooked till tender. Season with salt and it's ready to be used on the sandwich or on top of a pasta dish.
