Next you will fill a large pot with a two inch deep layer of vegetable oil, clipping a deep fry or candy thermometer to the side of the pot (be sure it doesn't touch the bottom), set the burner on medium high heat until the oil temperature reaches 350 degrees Fahrenheit. Working with a few pieces of chicken at a time, you will roll the chicken pieces in the flour mixture until throughly coated, shaking off any excess then dip in the buttermilk mixture, again shaking off any excess and transferring to the dish with crumbs turning until completely coated. You will then place in a single layer on a baking sheet.
