Cabbage Rolls

Some dinner recipes bring us back to our childhoods, when mothers or grandmothers would provide comfort food that the whole table would love. This "Cabbage Rolls," recipe is just that recipe that evokes a simpler time, in a warm recipe loved by generations of people across the world.

Whether you call them cabbage rolls, stuffed cabbage or golabki, cabbage leaves stuffed with meat and rice has been a favorite dinner recipe for years. Cabbage roll recipes are very common in Eastern European and Middle Eastern cuisine, with variations in the ingredients and spices used. Some of the ingredients you will need for this cabbage roll recipe include cabbage leaves, cooked white rice (you can cook the rice in beef broth for added flavor), minced onion, extra lean ground meat (half ground beef and half ground pork), salt and pepper, crushed tomatoes, lemon juice and Worcestershire sauce. To start you will want to steam the entire head of cabbage in a pot of boiling water (with the core of the cabbage removed first), letting the cabbage head boil for about six to eight minutes. When you start to notice the leaves separating from the head, you can begin to gently peel the softened leaves away with a fork. This step is important as you want to try and remove the leaves as carefully as possible to avoid tearing the leaves. Drain the head of cabbage and peel the leaves off the cabbage head when it is cool enough.

Next you will combine your cabbage roll ingredients in a large bowl and mix together. Now you can start scooping about a 1/4 cup of mixture into the center of each cabbage leaf and roll them up, making sure to tuck in the ends so the filling stays snug inside. You can either place the cabbage rolls recipe a slow cooker, or you prefer to bake them, place them in a lightly greased 9 by 13 baking dish.
