Its that time of year again - Summer picnics, lots of birthday parties, and social gatherings galore. I somehow always commit to more than I know I should, but hey, why not right? I love cooking and baking just the idea of making something delicious, sweet, and decadent gets me excited! Caramel Banana Slab Pie is a dessert that is surely a crowd pleaser. And even better, its super easy to put together all in one dish, no muss or fuss!I came across this recipe online and I of course had to try it out. The combination of banana with caramel sauce, crunchy graham crackers, topped with whipped cream; its definitely a combination that works. Layered sweet banana-caramel goodness. Yum!

I made this dish for my kids last weekend. My youngest was hosting his turn of weekend-slumber party madness, and all the kids definitely were thrilled to have a bowl of this while they watched their evening film. It take less than 30-minutes to put together, but with this hot summer weather, its definitely enjoyed best chilled, even slightly frozen to be honest. I will warn you Moms out there that it is messy. Oh yes. And if you have messy eaters at the table, than be careful. Get out those serviettes and napkins; don't let your kiddies sit on your best-upholstered sofas. Just be careful. Like any dessert with caramel sauce, its sticky and if you get it onto clothes, you definitely want to have some Shout strain spray at hand for a quick repair. That being said, I'm still a big fan of this dessert. Its great for summer and even better to bring as that special sweet potluck item.

I think caramel added to any recipe, makes it that much better. A variety of candies, desserts, and confections are made with caramel such as brittles, nougats, pralines, crme brle, crme caramel, and caramel apples.

Next time its your turn to make something special for your family and/or friends, try this recipe. You can even get a little creative and try adding what ever toppings or little extra flavors that you may like. Try sprinkling in some chocolate chips, maybe add some different crunchy cookie textures...chocolate sauce, or if you want to get a little fancier, what about adding some Baily's Irish cream to the whipped cream mixture. That'll definitely take this dessert to a whole new level!Go on and go-bananas! Eat, enjoy, and be happy!
