Pumpkin fritters are a popular breakfast treat in Trinidad, Barbados and other countries in the Caribbean, the breakfast recipe tastes good with a dab of butter and some maple syrup. Sprinkle with powdered sugar for a dessert treat. Some of the ingredients you will need for this breakfast recipe include pumpkin (calabaza squash), flour, beaten eggs, baking powder, cinnamon, nutmeg and some oil for frying. To start you will place the pumpkin in a small pot with water and cook until soft, for about twenty minutes. Strain the pumpkin, making sure to reserve the liquid. You'll let the pumpkin cool for about twenty minutes, then mash the pumpkin and add the ingredients with some of the reserved cooking liquid. Next you will heat the oil in a frying pan over medium heat, when the oil is hot you will drop spoonfuls of batter into the oil and cook until golden brown. Serve with a dab of butter, and some maple syrup. You can also serve with some powdered sugar if you'd like.
