The ingredients you will need for the crust recipe (unless you use a store bought crust) include all-purpose flour, cold cubed butter, cold vegetable shortening, ice water, kosher salt and freshly ground pepper. You will also need some beans to help weight the crust during baking. The ingredients you will need for the quiche recipe include eggs, milk or heavy cream, grated sharp cheddar cheese, chopped onion, chopped zucchinis, olive oil, nutmeg, kosher salt and freshly ground pepper, and mixed herbs for garnish (optional).

To start preheat the oven to 450 degrees Fahrenheit, and spray a pie pan with some non-stick spray. In a food processor that is fitted with a steel blade, pulse the flour with very cold cubed butter, shortening and some salt until the mixture is pebble-like in texture. Then while pulsing, slowly drizzle in some ice cold water until a dough ball begins to form. Then turn out onto a counter and roll into a ball. Then wrap in plastic wrap and refrigerate for approximately 30 minutes. Then remove from refrigerator and roll out onto a lightly floured surface. Then fold dough in half and carefully transfer to a 10-inch pie pan. Then spread the dough out slowly in a pan and trim off any excess overhang. Then cover the crust with a sheet of parchment paper or aluminum foil and weigh down with some beans.

Then place into the oven and bake for about 10 minutes. You can remove the beans and bake, uncovered for another five minutes. Then remove from oven and reduce the oven temperature to 350 degrees Fahrenheit. Then heat two tablespoons of olive oil in a large pan over medium-high heat. Then cook the zucchini until softened, approximately 8 to 9 minutes. Then add the onion and some more olive oil if necessary, and cook until the onions are translucent and fragrant, stirring occasionally. About 5 to 7 minutes.Then drain off any excess oil and season with salt and pepper to taste and set aside. Then in a medium sized bowl, mix the milk with beaten eggs, and add nutmeg and a pinch of salt and pepper. Then spread the veggies out evenly in the crust and slowly pour in the egg mixture. Then cover the top with some mixed cheeses and herbs, if using. Place in the preheated oven and bake for 35 to 40 minutes, or until the crust is golden brown and the cheese is bubbly. Let the quiche cool about 10 minutes and serve while still warm.
