According to his book �Cook at Home in Chinese�, published in 1938, Henry Low's egg roll recipe called for roast pork, shrimp, bamboo shoots, water chestnuts, scallions, salt, sugar, pepper, and MSG.

One thing's for sure, the creation of the egg roll was the direct result of two cultures colliding � Chinese and American. It was really a matter of using local ingredients for Chinese cuisine � local ingredients that the locals enjoyed. And the egg roll just worked! Egg rolls became so popular that they're still in high demand today. Just don't try to order them at a restaurant in China. They might think you're a bit daft if you do that.
