Chicken & Green Chile Enchiladas

Just what goes into enchiladas sauce? In this recipe they ask for a can of enchilada sauce which is quick and easy to purchase and use, but what ingredients go into this type of sauce. Basically enchilada sauce is made with fresh tomatoes, onion, garlic, olive oil, lemon juice, then seasoned with chili powder, cayenne, cumin, oregano, rosemary salt and pepper. It is easy to make your own sauce but for most people that have full lives working, buying it in a can is a quicker option and there are some great canned sauces out there. Unless you know your Mexican foods, you cannot always remember which is which! What is a quesadilla, a burrito or an enchilada! Enchilada is a corn tortilla that is rolled around a filling. This is then placed in a baking pan and covered with a chili pepper sauce. Fillings can include beans, cheese, meats and potatoes. A quesadilla is either a corn or a flour tortilla filled with a savoury mixture of cheese, vegetables, meats, refried beans and avocados. A US quesadilla will often refer to a type of sandwich made from two flour tortillas where the tortilla is placed on a skillet, heated with cheese and other ingredients in the middle, flipped and heated until all the inside ingredients are hot and melted. This is them put onto a plate and cut into wedges. The Mexican’s would call this type of quesadilla a ‘gringa’. There just so many easy tasty Mexican based meals that rank in the ‘make it at least once a week’ category in so many households in North America. Children and adults alike seem to gravitate easily to the combination of flavors.
