Chocolate Chip Cream Puffs
There is something about cream puffs that take me back to my childhood, when my mother used to surprise me with the occasional cream puff from a local European bakery. This "Chocolate Chip Cream Puffs" recipe is a variation on the traditional popular cream puff.
This chocolate chip cream puff recipe has a few steps from the cream puff pastry recipe, to the filling recipe and the cream puff glaze recipe. The ingredients you will need for the filling recipe include half and half, granulated sugar, salt, cornstarch, eggs, unsalted butter, vanilla extract and frozen reduced calorie whipped topping thawed. The ingredients you will need for the glaze recipe include light colored corn syrup, half and half, vanilla extract, powdered sugar, and unsweetened cocoa. To prepare the filling combine some half and half, some granulated sugar, and a dash of salt in a saucepan and bring to a simmer. Combine remaining sugar, cornstarch, egg, and egg yolks in a medium bowl and stir with a whisk until smooth. Gradually drizzle milk mixture into egg mixture, stirring constantly with a whisk then return the mixture to pan. Cook over medium heat until mixture thickens approximately four minutes while stirring constantly. To prepare the glaze recipe, combine the corn syrup, some half and half, and some vanilla in a microwave safe bowl. Microwave at high for 15 seconds. Add the powdered sugar and cocoa and stir with a whisk until smooth the glaze should be thick and sticky.
