Cinnamon Sugar Sour Cream Pancakes

Maybe you only indulge in pancakes on a Sunday morning? Maybe your life is a little bit more flexible and you can treat yourself to this decadent and classic breakfast on a Wednesday! Whatever the day is, this recipe will be a huge success with everyone that is lucky enough to eat it with you. These pancakes are not regular run of the mill pancakes, they are cinnamon sugar sour cream pancakes! They are ultra-cinnamony (if that's a word), and very creamy from the use of sour cream. They are rich and flavorful and very filling, so don't bother to also make eggs, unless you are like my husband and can truly take down all this food in one sitting.

Now, I am not saying that there is anything inherently 'healthy' about pancakes drenched in maple syrup, but I will say one thing about making recipes like this a bit healthier for your body and easier to take all the sugar. This is the addition of lots of cinnamon! Add it into the batter, sprinkle it onto generously and you will enjoy the benefits of this blood sugar balancing substance. Did you know that just 1 teaspoon of high quality cinnamon a day can help to manage blood sugar? Even diabetics on medication can add ground cinnamon to their recipes or even take cinnamon capsules. They will need to beware to watch their blood sugar more carefully, but they might find that there is less of a need for medication with the addition of cinnamon.

Let's get back to this breakfast though, and one last thing on how to make it even yummier! Bacon! Yes folks, sweet and savory. Meat and pancakes! Syrup and bacon together just about my favorite combination for a Sunday brunch. Add and hot and creamy cappuccino and you will have perfection on a plate! (or table).
