The ingredients you will need for this brownie bars recipe include some butter, sugar, eggs, baking soda, salt and vanilla extract. You'll also need some cocoa powder, all-purpose flour, softened cream cheese, sugar, and eggs. Along with some sour cream, vanilla extract and a pinch of salt. To start, preheat the oven to 350 degrees Fahrenheit and grease a 13-inch by 9-inch glass baking pan. Cream the butter and sugar together in the bowl of stand mixer fitted with the beater attachment. Scrape down the sides of the bowl, then add eggs and mix until combined. Then add the vanilla, baking soda, salt, and cocoa until well mixed, and then add flour one cup at a time and beat after each addition. Scrape out the mixer bowl into a medium bowl and save mixer bowl for making the cheesecake layer recipe. Divide dough recipe in half and press one-half into a prepared pan. Bake for approximately 8 to 10 minutes until the top starts to darken and looks somewhat dry. Then remove from the oven and cool while you make are making the cheesecake filling recipe.

For the cheesecake recipe beat the cream cheese in the mixing bowl with the whisk attachment until completely smooth and lump free, scrape the bottom of the bowl and mix longer to be sure it's all smooth. Add sugar and mix until creamed, and beat in the egg. Next add the vanilla, cream, and salt and mix until combined.Lay the cookies (Jojo's or Oreos) in a single layer on top of the cooled cookie layer. Pour the filling over the cookie layer and crumble the remaining half of chocolate dough over top. Bake for 20 to 25 minutes until the center of the bars is lightly browned on top. Remove and cool for approximately 30 minutes then place pan in the refrigerator and chill for at least three hours before serving. Cut into squares and serve chilled.
