She uses chicken thighs instead of breasts, because lets face it, if you're into cooking at all then you know that the thighs just taste way better - hands down. Some people think of them as a fattier option than the white meat, but you know, there's also more iron and other good nutrition that you need. So don't avoid them, embrace them and consider making this incredible dish. It's a one pot meal so less dishes for you and the family, and you can adjust the amount of Cajun to your taste in case you or the kiddos are a bit sensitive to the heat. Either way, with the addition of penne and other awesome veggies, this meal is just as healthy as it is delicious so it's a double bonus! It's not your run of the mill pizza, or pasta for that matter - it combines the best of both worlds to make something truly remarkable.

This creamy Cajun chicken pot pizza recipe looks amazing too, it's one of those meals you can't help but have seconds of. You will start off by heating a large skillet or pot on the stove over medium-high heat. You will want the pot to be large enough so that it will fit the entire recipe. Take the chicken pieces and season them with some Cajun seasoning completely covering it. Then sprinkle the flour overtop of the chicken, coating throughly. At this point you can start heating up the water to cook the pasta, and when it starts to boil throw in the pasta.

Then you will add some oil and butter to the pan. You can add the coated chicken to the sizzling pan, and start cooking it, until it gets crispy and a deep brown, making sure to flip it so both sides look the same. When the chicken is cooked you can remove it from the pan, and set it aside on a plate. At this time you can reduce the heat for the frying pan to medium-low and add a little more butter to the pan. You can put in the onions and peppers with some salt and pepper and stir evenly. Cook the onions and peppers until they are soft. Then add some more butter and cook the mushrooms until they are soft. You can add in the garlic at this point. Increase the heat back to media high and pour some chicken stock into the pan while stirring and scraping the pan for the crispy pieces. Bring the chicken stock up to a boil and cook for another five to six minutes. Now you can reduce the heat again, and stir some cream. You can then add the chicken and the pasta. Garnish with some fresh chopped up parsley and serve.

This is a great recipe to enjoy, especially when the weather gets a bit colder and you need some extra warm and healthy ingredients to build up your immune system. Chicken stock is especially good for that.
