Creamy Garlic Herbed Mushroom Spaghetti is a dish that somehow, no matter how much you make, will always be polished off. There will definitely be no leftovers on this recipe – yes, its just that good!
Though I’m not vegetarian, I like to make at least three or four days of the week completely vegetarian – from start of the day to end. Now I don’t count dairy or eggs – just to be clear – so if you really think about it, its not difficult to find things to make that simply leave out animal proteins. Plus it gets you thinking more about your food and what you’re cooking. After all, being mindful about what we eat is so important. Really! Its too bad that many of us have fallen to the wayside and forgotten this. Truth me told, we’re either too busy or simply too lazy. Anyway my point about incorporating more vegetarian based meals in your diet comes with a few advances besides perhaps forcing you to get creative in the kitchen. Its just better for you. Having a primarily plant-based diet has been shown to ward off all those horrible diseases and conditions, give us more energy, allow us to maintain a healthy weight, contributes to a better nights rest, and is of course better for our environment. You’d think otherwise, but did you know that the majority of carbon green house gases – causes global warming – come from livestock. Yes, livestock. You’d think the primary suspects would be transportation or factories…nope! Livestock. So, by you choosing to eat less meat and more vegetables..well you are making a step towards a cleaner, safer, and more sustainable environment. Isn’t that worth it?
Garlic is one of those popular food ingredients that can be added to a wide variety of recipes from guacamole to salsa, soups to stews, casserole and stirfrys, it adds a flavor many can't do without. Garlic whose close relatives include the onion, shallot, leek and chive, has been used by humans in all sorts of recipes for over 7,000 years. Garlic is native to central Asia, and has long been a staple in recipes in the Mediterranean region. Garlic has also been traced back to the Ancient Egyptians, for use in food recipes and medicinal purposes. Garlic has long been popular in helping with the prevention of the common cold, along with other beneficial health benefits. Garlic scapes are removed to focus all the garlic's energy into bulb growth. The scapes can be eaten raw or cooked, they give a nice burst of garlic flavor to whatever you add them to.
So when I think of some great meat alternatives – you know, ingredients that are hearty and still give you that substantial oomph to a dish, I instantly think of portabello mushrooms. Well, all mushrooms in general are a great meat swap ingredient. And guess what else? What’s great about them is that they are packed with Vitamin D – yes, the sunshine vitamin! Even better!! Anyway, working with mushrooms just works and will yield a dish that’s not only packed with flavor, but will feel hearty, even comforting – don't worry, you wont be missing meat. I guarantee it! The recipe I found is absolute delicious! It really is. A perfect dinner you can make for your sweetheart – though watch out or using too much garlic – or a dinner that your family will definitely be asking for seconds. Go on and try it out! Bon appetit.
