Grilled Stuffed Jalepeno Peppers

There are some lovely ways to prepare stuffed peppers during the summer season. The traditional way of baking them in the oven is replaced by BBQ season and grilling peppers is a wonderful way to serve them. I have always been fond of stuffing peppers and grilling spicy peppers, but never really a fan of breaded and deep-fried spicy peppers, so when I came across this recipe mentioning Grilled Stuffed Jalapeno Peppers, it sounded like something I had to try. Like the breaded and deep-fried version, the creamy combo of cream cheese and cheddar, with accents of bacon, contrasts the muted heat of the grilled jalapeo peppers but the grilling part is a fresh and healthy alternative. The recipe involves cooking up some crisp bacon and mixing it into a blend of cheeses and garlic before stuffing the peppers. Once they are grilled lightly (6-8 mins until lightly browned) they are taken off the heat and garnished with bits of fresh tomato and cilantro.

Another delicious meal is to take regular peppers and stuff them with a tasty array and grill them on the BBQ for more of a meal. They stuffed peppers can be filled with almost any combo of meat like ground beef or turkey and veggies even grains like rice ad quinoa. Some of the more popular with my family involve a black bean and rice spicy southwestern style or a quiona and sauteed mushrooms with cheddar cheese and crisp bacon stuffing that makes the peppers disappear into the mouths of my hungry family. Peppers come in many colorful colors like reds, oranges, yellows greens and even purple! The types vary and are versatile to many different areas of the world, so many different options can be produced. There are even more options to top the peppers with, with melted mozzarella cheese being my favorite. Another bonus is that they can be stuffed beforehand for a party, and then left covered and chilled and then can be placed right on the BBQ when dinner about to be served.

A combination of the spicy peppers and the grilled peppers is in order, and this hot summer BBQ season is just the time and place!
