Hawaiian Wedding Cake combines the perfect balance of soft spongy cake with pineapple filling, topped with a velvety pudding or icing. One of the things I love about baking is enjoying time in the kitchen with loved ones, so when my dear friend Carla came to spend her one week vacation with me, away from her high stress and busy lifestyle she likes to call life, back in New York city, I thought it would be nice to catch up and connect in the kitchen over something sweet! You see, both Carla and I love to cook and bake � that is when we have the time for it, so it was perfect. And of course we had some good laughs along the way!

One of the many things we baked that week was the Hawaiian Wedding Cake from a site I found a few months ago � its great.

This recipe comes together in a matter of minutes. You literally throw everything in a bowl � well after draining the pineapple thoroughly - and mix it with a spatula before pouring it into a greased cake pan. Once it cools, you frost it with a tangy, sweet (but not too sweet) cream cheese frosting or even pudding. If you're like me and like to decorate your baked creations, you can add some toasted shredded coconut on top or go classic and add a few brightly coloured maraschino cherries to each sectioned piece. I decorated with some dried pineapple rings � looked really nice!! Anyway, result is a tropical flavored cake that's more dense and moist than most cakes.

We followed this recipe with a few changes � rather than using a cake mix or instant pudding, we decided to make everything from scratch. If you're up for that challenge, just go on and find your favorite sponge cake recipe and vanilla pudding recipe and you're good to go. Otherwise, just pick up the boxes and shh, don't worry, we won't tell anyone.

It's a great cake to serve with ice tea in the backyard with close friends on a beautiful Summer's day. Each bite will remind you of the tropics and you might just stand up and do a little hoola dancing! Aloha and bon appetit.
