If you have been craving for mozzarella cheese, here is how you can easily make one for yourself, and it is unlimited! This 30 minutes mozzarella cheese is originally from Ricki Carrols book �Home Cheese Making� and it is amazingly delicious. Here are simple steps to do it:

Step 1: Get a big stainless steel pot and bring the milk up until 55 degrees F. Add citric acid to the milk at 55 degrees F and keep on stirring.

Step 2: Heat up the milk until 90 degree on medium-low heat and keep on stirring. Afterward, take the steel pot away from the heat and slowly stir in the watery rennet with up-down motion around 30 seconds. Close the pot and leave it for 5 minutes.

Step 3: By now, it should look like custard. However, if the curd is too soft or too milky, leave it again for few minutes. On the other hand, if it looks fine cut the curd with a knife that is long enough to reach the bottom of the pot.

Step 4: Once you have separated the curb, heat it back to 105 F. Move the curd slowly with a spoon. Then, take it off from the heat and slowly stir it 3 to 5 minutes to make the cheese well-founded.

Step 6: After the heating, knead it to spread the heat and until it is even and flexible. If it is elastic then you know the cheese is done!

At this point, the cheese is hot. Therefore you can place the cheese in a bowl of ice water around an hour to make it warmer, and by doing this you will make the cheese smoother. You can instantly eat the cheese, or you can keep it in a refrigerator.
