This honey mustard glazed cranberry pork loin roast recipe, is a super simple main dish recipe that makes it's own cranberry onion gravy while it cooks. This is a great main dish recipe that pairs well with a couple of easy side dish recipes, and a make-ahead dessert so you can enjoy some time with your dinner guests! This pork roast recipe looks as great as it tastes. For starters, you can brown your roast beforehand because it adds so much great flavor. Then for the onions you can slice off the tops and bottoms, peel and then slice in half, and cut into half moons. You can then give the onions a quick saute until they are a nice golden brown, and then spoon them onto the browned pork loin. Then you can whisk up the glaze; it's best to melt the honey on the stove over low heat and then mix the rest of the ingredients. When the glaze recipe is ready, you can brush it all over the browned pork loin roast and sprinkle the cranberries over the top of the onions.

To make the gravy recipe, whisk together some tapioca starch with white wine and pour it over the onions. The white wine will add a wonderful flavor. You can also use a good quality chicken stock if you'd like. The sauce may seem overly simple with just two ingredients, but as the pork roast slowly cooks the juices from the pork will mix with the gravy recipe and will take on the flavor of the saut�ed onions. The main key to this recipe is the low baking temperature which is a trick I learned from Cook's Illustrated. When you're roasting a pork loin, they almost always come out drier than sawdust on the edges with the center still a bit pink. But by keep the oven temperature really low, the pork roasts evenly, and comes out perfectly juicy!

The ingredients you will need for the pork loin roast recipe include a pork loin roast, some olive or avocado oil, onions, and some cranberries. For the honey mustard thyme glaze recipe, you will need some honey, dijon mustard, minced fresh thyme, sea salt and some freshly ground black pepper. Then when the onions are sauteed, and the glaze recipe is done, place the pork roast into the preheated oven and roast for approximately one and a half to one and three-quarter hours.
