Hot Chocolate Cupcakes
Are you a fan of fondant? Have you ever heard of fondant? A fondant recipe uses a heavy mixture of sugar to create a thick and moldable layer that can be cut and shaped into any design. In this case, you can make the outside 'cup' for these sweet cupcakes from Diary of a Ladybird.
Isn't it a mouthwatering recipe? Well, brace yourself and prepare for this heavenly recipe that you’ll surely love. Jot everything down and compile it to your bucket list of recipes. So here you go! First thing is to make a bunch of vanilla cupcakes. Once it is cooled, peel off the cupcake papers. Leaving the top and the base expose or uncovered, smoothed a white chocolate ganache all over the sides. For about 30 minutes, attach a measured strip of ready to roll fondant once you already set the ganache.
The strip is actually wide and matches the cupcake’s height in order to hold the cupcake icing to follow. For the cup handle, lay your cupcake on their sides and attached a small strip of fondant with a small amount of water. You may add a food colouring for your Italian meringue icing and carefully spooned the icing into the “cups” and gently topped it up with tiny marshmallows.
If in case you don’t know the recipe of Italian meringue icing, let me give you the creamy, voluminous and soft recipe of it. All you need to prepare is 2 egg whites, 1/3 cup of water or approximately 80ml and 1 cup of caster sugar that is actually 200 grams. Are you ready for the instructions? If yes, it is sited below.
1) Combine the sugar and water into a saucepan and stir it over with heat without boiling until the sugar is dissolved.
2) Boil it uncovered until the syrup reaches 116 degrees on a candy thermometer. Take note, do not stir it. The syrup must be thick, and no colour. Remove it from heat and allow the bubbles to sink.
3) Using an electric mixer, beat the 2 egg whites and add the hot syrup.
4) Beat on a high speed for about 5-10 minutes until the mixture reaches thick and glossy.
And there you have it, a perfect hot chocolate cupcakes!
