To start freeze the cheese for approximately 45 minutes to one hour. Cook the potatoes in boiling water for approximately 25 to 30 minutes or until the potatoes are tender. Drain and cool the potatoes completely. Then peel the potatoes and cut into one inch cubes. Grate the frozen cheese. Preheat the oven to 325 degrees Fahrenheit. Whisk the mayonnaise and half and half in a bowl, then stir in the onions, potatoes, and cheese until well blended. Add some salt and pepper. Then spoon into a 9 by 13 inch baking dish that has been coated with cooking spray, then top with bacon pieces. Bake the hot potato salad recipe for approximately 55 minutes. Then increase the oven temperature to broil, and broil for about five minutes or until the bacon is crisp. Let stand for about five minutes.
