Start off by preparing your pasta sauce so that it is ready when your pasta has finished cooking.

Cooking pasta as per the package instructions. When it has reached "al dente", which means there should be a slight resistance in the center when the pasta is chewed. Once you are satisfied the pasta is cooked, take it off heat but do not drain. This is key to the process of preparing perfect pasta. Let me say it again, do not drain and rinse the pasta!

Your probably wondering why we shouldn't rinse the pasta and here is the answer. When you drain and rinse pasta, you are removing the starch that creates sticky pasta. The alternative is to keep the starchiness, giving the finished dish a smooth and silky texture.

Now that we've established we are not draining the pasta we can move onto the correct procedure. Simply lift the pasta out of the water with a large slotted spoon and place it into the pot containing your prepared sauce. Give a little toss in the already heated sauce, allowing the flavors to marry for about 1 minute.

So back to pasta water, take a scoop of that loveliness and add it to the pasta & sauce. Gently toss again. Adding a bit of this starchy water is going to enhance that smooth texture.

Next you will step up the whole experience by adding some grated parmesan and fresh herbs. Blend this together gently and you are ready to enjoy.
