Sometimes the typical shortbread recipe can be finicky, too much of one ingredient, or if the temperature of the oven is off, or even the humidity in the air and the cookies can end up hard, or dry tasting. What you want with shortbread cookies is a nice melt in your mouth kind of texture that is so irritable.

This recipe is very very simple, you might think you are getting off easy! Tammy first takes the butter which has warmed to room temperature and mixes it up so its nice and soft. In any cookie recipe you want to make sure to use softened butter, preferably that has reached room temperature on its own, but it can be heated in the microwave or in a double broiler to soften it on the spot. Just make sure it isn't too runny though as this could ruin the constancy of the cookie dough. She then adds in some powdered sugar and then all of the flour cornstarch and salt. She has a nice stand up mixer that she uses which is great for cookie dough recipes, that way you don't kill your arm mixing it either.

Once all of the dry ingredients go in you add in some almond extract, which gives the cookies that nice, sweet almond flavour that tastes so awesome. Then the chopped up candied cherries go in to brighten up the white cookie dough. This is quite a festive looking cookie recipe, and it could also be lovely for Valentines day. Once all of the ingredients are well mixed together, she puts all of the cookie dough into a piping bag that is usually used for icing and frosting and she pipes nice little cookies onto her cookie tray. They look so sweet like little rosebuds when she pipes them out! Them all you have to do is add a candied cherry that has been cut in half and they are ready to be baked! You will be so happy with the results, that lovely light shortbread cookie flavour with the cherry and almond flavours that all go so nicely together.
