If you season it lightly the first time you cook it, you can pretty much use it in any recipe and then add any kind of flavor to it. I love doing chicken enchiladas or fajitas with my left over chicken, or even chicken pizza or in pasta. It is also great in soups and of course on salads.

This lasagna roll recipe is simple to do. As easy as cooking up some lasagna noodles. Cook the pasta according to the package directions. Then you can spread the delicious mixture of Parmesan, ricotta, egg, garlic, salt and pepper over top each lasagna noodle. Then you will add a little pesto over the top of the filling mixture. It is a good idea to lay out the cooked lasagna noodles onto a double layer of paper towels, that way you can blot up any excess water on the noodle.

Next you can add a little bit of cooked, chicken that has been shredded. You can use grocery bought rotisserie chicken which works nicely, but you can also cook up a chicken of your own and shred it. Then roll up the lasagna noodles. Then lightly coat a nine-inch by thirteen-inch baking pan with some non-stick cooking spray, and put the lasagna rollups, with the seam side down into the baking pan. For the sauce you can use your favorite remade marinara sauce for this if you like, or again make a homemade version. To the marinara sauce you will add some half and half cream and mix the two together. Then spoon the marinara sauce mixture over the lasagna roll ups.

Then you add your shredded mozzarella and some Parmesan over the top of the lasagna rollups, and put in a preheated 350 degree Fahrenheit oven. Bake for approximately 30 minutes, until the roll ups are bubbly and heated right through. A nice recipe like this can be made any night of the week. It's also a nice dinner recipe for when you have guests over, each lasagna roll up being the perfect serving size, that plates up beautifully, and is easy to do.
