In the cool fall and winter months, when you don't mind spending time in a nice warm kitchen, it's always fun to spice things up a little. Sausages are a great way to do this, and they will certainly spice up this breakfast casserole!

Sausage-making is a tried and true technique used to preserve the lesser cuts of meats and, as a kind of side bonus, it makes them taste good! The word sausage comes to us from sausige, a Middle English word derived from sal which is Latin for salt! Neat, eh? Indeed, all of the best sausages do have a fair bit of salt in 'em. That's probably why they're so addictive! In France, they are called sausissons kind of similar-sounding, but in Germany they are wurst. Germany has truly perfected the art of sausage making, but many other Europeans have excelled at it as well. And these days, over two hundred different kinds of sausages are made in the United States! Thousands are made world-wide. So we're not in any danger of going into a sausage shortage any time soon.

Moving on to hash browns! We all love these yummy potato bits for breakfast - or for any meal. When these little puppies were first invented, they were best known as hashed browned potatoes, a term popularized by Maria Parloa, a food author who recorded recipes in the late 1800s. Over the years, this relatively lengthy term was shortened to just hash brown potatoes and today, simply hash browns. There are several variations of hash browns, including hash brown patties, tater tots, and pan fries, but this wonderful recipe calls for traditional hash browns. These are simply shredded potato pieces that we can fry up in a basic frying pan. The best thing of all about this recipe is that it's a casserole! Casseroles are the top winter-time food staples, in our books, because they heat our kitchens up real good when the weather's cold outside. They smell so good when they're cooking, and tend to draw everyone else in the household into the kitchen to enjoy their warmth and mouth-watering aromas.

It's easy to understand why American casseroles became so popular in the Depression era. Then, as now, all you have to do is look in your fridge to see what ingredients you have, cook them up and toss them in, and voila you've got a hearty one-dish meal made from leftovers; one that was easy to make and didn't cost a thing. In addition, the smell of this wonderful, hearty meal cooking must have cheered the whole family indeed, the community up fostering a sense of abundance in a time of great need. Be sure to check out the entire video to catch all of the yummy ingredients for this delicious Breakfast Casserole! It's sure to be a crowd-pleaser any day of the week.
