The one item in this recipe that some may like to change is the green bell pepper. Green peppers are not always high on the list of foods that many people care for. Substituting a fresh red bell pepper is a great option. Red peppers are sweet unlike green peppers which can have a more bitter flavor when cooked. Peppers are a really good food to eat. Bell peppers have a thick fleshly texture and are not hot peppers to eat. Fresh peppers are readily available in food stores year round. Choose nice firm and brightly colored fruits. Avoid soft pale colored peppers or peppers that have bruises or are shriveled. Storage is easy. When you get your peppers home, wash them in water with a little vinegar, dry thoroughly then store in the refrigerator in an air tight container. Peppers will stay fresh for several days. To prepare your peppers for eating, cut them in half, remove the central core with the seeds then slice into the desired size for the dish you are preparing. The Jalapenos peppers called for in this recipe on the other hand are a hot pepper. When cutting and removing the core and seeds from your jalapeno pepper be mindful as it will leave your skin with a burning sensation that you can cause irritation to your face and eyes if you happen to touch your face after cutting the pepper.

It is advisable to wear thin hand gloves when handling hot peppers. Those little white seeds within on the core have capsaicin in them.
