So last weekend I was invited to my best friend's annual Summer Solstice party. The theme this year was all white, so I definitely wanted to bring something that would pose such a risk if spilled, dropped, or knocked over somehow. Could you imagine? Chocolate cake on a white dress or accidentally spilling a beautiful raspberry coulis on your trousers? Oh my goodness that would definitely ruin my night. Anyway, I was elected to bring a dessert. Sandy is very organized when she plans any sort of dinner or social gathering. She delegates every guest to a certain course � appetizer, main, dessert, beverages...it keeps things in order and also prevents a lot of overlap. I think its brilliant. Anyway, I was ordered to bring a dessert so I put on my thinking cap and starting pondering about what type f dessert would be 1, safe around a whole bunch of white 2, have a summery feel/taste 3. be easy and delicious.

When it comes to Summery desserts, I instantly think of something light, fresh, vibrant with taste...And then it came to me! Of course, I had to make something citrus. After browsing the web for a few minutes, I encountered a recipe that included not only citrus...but citrus and coconut. How can you go wrong with this combo? I had all the ingredients in the pantry, so I headed into the kitchen and got to baking! This recipe is so easy, I utilized my food processor which made the crust come together in a matter of minutes. The end result was a lovely citrus flavored bar dessert with an amazing toasted coconut topping...seriously, these bars scream warm weather!

Once you make these bars for yourself you'll quickly understand why they were gone in just a matter of moments. Gooey lemony deliciousness with a little bit of toasted crunch from the coconut. Mmmm... so good.You gotta try these! Bon appetit.
