One of the more underrated ingredients in this dish would be the potatoes. While we've all read or heard about the Great Irish Famine (in which a disease known as a blight caused a fungus to grow and spread rapidly, leading to crop failures nation-wide) and know how important potatoes are to Ireland, did you know that of the 5,000 potato species, over 99% of cultivated potatoes are actually from varieties that originated in south-central Chile? The potato was first domesticated in the region now known as southern Peru and in the northwest of Bolivia some 7000-9000 years ago. Per capita, production is highest in eastern and central Europe where potatoes remain an essential crop but since 2007 China has led in potato production by harvesting nearly one third of the world's potatoes. Worldwide, potatoes are the fourth-largest crop, after maize, wheat and rice.
