Cozy Country Living has an excellent recipe for Loaded Vegetable Soup. This soup is full of nutritious goodness that will keep you warm and satisfied for hours. In our house, we make at least one massive pot of vegetable soup every week, especially through the fall and winter months. I also make soup any time of year if I feel a chill or a cold coming on. I am a strong believer in Hippocrates' famous quote �Let food be thy medicine and medicine be thy food� and soups lend themselves well to the addition of medicinal herbs such as garlic, turmeric or oregano. Not only does the addition of herbs and spices add delicious flavor to your soup, many plants also have unique healing properties. Garlic is known for its ability to support the body's immune system, helping us ward off colds and flus. But did you know that garlic can also be used to support cardiovascular health and regulate cholesterol levels? Turmeric, on the other hand, is an excellent anti-inflammatory herb that can help to relieve arthritis or other joint pain. Oregano is often used to treat respiratory conditions such as colds or asthma and lends a delicious Mediterranean flavor to your soup.

If you want to pack more protein into your vegetable soup you might consider adding beans or lentils. Red, green or brown lentils cook relatively quickly compared to beans and do not require a long soaking period, so they are easier to add at short notice. Another option is to keep canned beans on hand to quickly and easily add a punch of protein to your soup. However, if you are good at planning ahead and want to save some money, I would suggest cooking dried beans from scratch. I often cook a big batch in my slow cooker and keep them in my fridge or freezer so they are ready to add to my soups when I need them. Beans provide both protein and fiber to help us feel full longer so we will be less likely to snack between meals. Vegetable soups in general are an excellent weight loss food because they are high in fiber, vitamins and minerals and low in fats and sugars.
