The cheese gets is name from the cow's milk that that comes from Italy, more precisely, from the village of Asiago. Fresh Asiago is delicate and sweet and is made with whole milk. Aged Asiago cheese is more savory, and they age it from 3 to 12 months. It is made with skim milk. This cheese is easy to find in most grocery stores in North America.
