No Bake Lemon Pie

Lemon Pie is frequently considered to be a Southern confection. Magical movie images of plantation parties with that lovely slice of a sky-high slice of lemon meringue pie served on china dish. For some, they might think of it as a Diner restaurant clip, a featured highlight in a revolving glass dessert along side with the other delicious treats of �clairs, cream puffs, and cheesecakes. Yes, the movie and magazine images of a picnic table set out, adorned with slices of lemon meringue pie, you all know what we are talking about!

Back at New Years, someone brought a lemon pie to our house that was tremendously yummy. It didn't look like your average commercial lemon pie, but it looked like a cool whip pie. I abruptly searched the internet and Google out in order to find something; a No Bake Lemon Pie! The filling for this pie consists only of three ingredients. Are you stunned?! It's true! A pie crust and cool whip, a sweetened condensed milk and lemon juice. If you want it to look like yellow, you can add colouring if you want.

The pie filling only takes a few minutes to beat the condensed milk with the lemon juice, so that is a snap, but it must be refrigerated to stiffen for a few hours before slicing.

Honestly, it was extremely hard to wait! So patience my dear is a virtue. *chuckles* this recipe is a nice alternative for Lemon Velvet Cream Pie and a great addition to your recipes for holidays.
