Open Face Scrambled Eggs and Avocado Toast

Need something more exciting for breakfast? Well then check out this recipe for Open Face Scrambled Eggs and Avocado Toast! It’s sure to start your morning with just the right amount of zing. This little recipe has everything you need to get you going for the day! It combines all of the good ingredients, like multigrain toast, scrambled eggs, and avocado. So there you have it – it’s an excellent source of protein, fibre, and healthy fat. This is actually one of my very favourite ways to eat eggs. Every time we have eggs and avocados, we will have this for breakfast. Sometimes we even add some bacon to the mix too, which is really yummy! I also love to put some cilantro on top, with some lime or lemon juice and cayenne pepper and paprika on top.

A few other helpful hints? If you like, you can even add black pepper to the end result for just the right flavour. Need something a bit brighter? How about a dash of cumin and a wee squeeze of lemon? Need something spicier? How about adding a little salsa? Oh, and to make it even healthier? You can add coconut oil to your eggs! Just think of how yummy this is going to be with orange juice or coffee – or both! It doesn’t even have to be an exclusive morning meal, either. This little baby would be the ultimate for any meal or snack of the day. It is also great for lunch too!

Let’s talk about avocados for a second, just so we’re all on the same page about how awesome they are. Avocados are very high in monounsaturated fat - the kind that’s good for you and your heart. They contain up to 20 different vitamins and minerals, all of which are very beneficial! Some of these include: Vitamin K, Vitamin C, Folate, Potassium, Vitamin E, Vitamin B6, and Vitamin B5. Eating avocados can also help you absorb nutrients from other fruits and vegetables. They are truly a superfood! They are really good for growing super healthy and strong hair, teeth and nails as well. Plus, they are so easy to just cut open and enjoy! Eggs are also great for us, they have great protein that keeps us going throughout the day. You need protein to have your brain and your muscles functioning properly, as well as fats. Some people are so worried about the fat content in avocados, but that is nothing to be worried about, since they are all natural, plant based fats that are so great for you in so many ways!
