I cannot tell you how happy I was to come across this food blog, Home Cooking Memories, and in particular this delicious easy oven baked meatball sandwich recipe! It is easy to prepare and provide hefty eating for a large group of hungry working men, or a big family on a Sunday visit at your place. You can substitute the type of meat in this recipe to accommodate your own tastes and health concerns, and you can even make it a bit healthier by adding some greens and healthy fibers into the meatballs. Sometimes I will sneak in shredded carrots, spinach and heaven forbid..even flaxseeds! No-one is ever the wiser, since it is smothered in cheese. You are just sneaking in the goodness and health factors that in the long run everyone will thank you for.
If you have the time to spare you can roll your own meatballs (as described), but in a pinch the grocery store meat aisles will often have pre rolled meatballs that are quite delicious and will save you about 20-30 minutes of preparation time. The downside is that you won't be able to sneak in those healthy ingredients, but when time saving is an issue, the next best bet is to put out some veggies and dip on the side so that your household still gets their vegetables!
The sauce in this recipe, again, can be homemade or store bought to save time. If you are making it from scratch then feel free to add it some extra herbs, healthy oils and home grown tomatoes. Otherwise find a tomato brand in a jar (less chemicals than aluminum cans) and dump this sauce on your masterpieces.
