The meats used in Fajitas can be chicken, pork, beef, and shrimp. It is usually cooked with onions and bell peppers. Shredded lettuce, sour cream, guacamole, salsa, pico de gallo, cheese, and tomato are added as condiments. The Mexican counterpart or variant of Fajitas is arracheras.

When the 'vaqueros' or the Mexican cowboy ranch hands in 1950's worked along the Texas-Mexico border, the Fajita story started. According to Texas Fajitas Co.'s website, the head vaquero has noticed that the butcher would just throw the cow's skirt steak to sell it to the dog food companies. Because of the toughness and the large amount of tendon in the skirt steak, the butcher would not use it for ground meat. �So the head vaquero asked the butcher if he could buy the skirt steak.� Exactly. The head vaquero brought the skirt steak to his men and did some experiments with various ways of cooking and preparing the skirt steak. They have discovered the best way to tenderize and cook the skirt steak: for the tenderization, just marinate the skirt steak in either lime juice or tequila, grill sear it over a mesquite wood fire so the tendon would draw up, and slice it across the grain to further decrease its toughness. In 1969, the cook for the Vaqueros has made a dish called 'Tacos al Carbon'.

The cook then applies to the Boerne Bergesfest committee in Boerne; Texas is denied because the item has already been sold by other members. However, the cook shows perseverance. He applies the next year and this time, he calls his dish 'Fajitas'. �No one with the Mexican social group knows what �Fajitas� are and stated they did not sell them � and that is the public unveiling of the 'Fajita'.�
