Brussels sprouts are in the brassica plant family along with cabbages, broccoli, kale, and collards. They are notably high in vitamin C, and vitamin K. Brussels sprouts come from a slow growing plant that does well in a cooler climate like the Pacific Northwest. They are planted in early spring for harvest in late fall. The sprouts themselves look like tiny cabbages and grow directly out of the central stalk of the plant from small buds that form in between the stems of the plant.

For this vegetable side dish recipe you need Brussel sprouts, olive oil, freshly ground black pepper and bacon slices. Start by preheating the oven to 400 degrees Fahrenheit. Take the Brussel sprouts and clean and trim them by cutting any large head in half, you can bake any of the outer leaves that fall off, by baking them with the rest. Put the Brussel sprouts onto a large baking sheet, then sprinkle with some salt and pepper. Evenly sprinkle the pieces of bacon over the Brussel sprouts. Roast the Brussel sprouts in the oven for approximately 20 to 30 minutes. Turn the Brussel sprouts halfway through, and cook until they are golden and nicely caramelized. Serve immediately after cooking.
