Yummy... pancakes... Was there any better way to wake up on a Saturday or Sunday morning when you're a kid than to the smell of your parents cooking up pancakes on the griddle?! I didn't think so! I remember when I was a kid, I started to want to actually make them for my family by myself, and so my mom showed me how to do it step by step, but when it came time to the flipping and pouring of the batter I was so frustrated and disappointed that my pancakes didn't turn out as nice and perfect as hers always did. Little did I know then that it takes a lot of practices to make the perfect pancake!

With this recipe though, you eliminate all of the precise pouring to make a perfect circle of batter and flipping the cakes which always seems to create a mess. All you do is simply pour the batter in the muffin tins, and away you go! So perfect for kids or if you don't have the time to cook the pancakes one by one!

I know I have always liked my pancakes with sausage or bacon, and this recipe puts them TOGETHER in the same mold! Which I can imagine would be super good. Fruit is also a nice addition to the pancakes, pop a few blue berries in while pouring the batter, or maybe even some chocolate chips! There are so few ingredients too; all the things you would need are things you probably have already, so no need to run out and buy expensive pancake mix. Just mix up the batter, pour it in and bake for 25 to 30 minutes. Add syrup and whipped cream and there you go! Bon appetite! You could also save them for snacks or desserts later on in the day too!
