Once your oven is preheated to 450 degrees Fahrenheit, you can cut up your potatoes into cubes or wedges. Then bring a pot of water to boil. Add the cut up potatoes into the boiling water, and cook for three to six minutes depending on the size of the potatoes. As the potatoes are cooking you can put some oil into a cast iron frying pan, or other heavy pan and heat it in the oven. Once the boils are parboiled you can drain them, and put them back into the pot. Put the pot back on the burner and shake the pot around a bit so that the dry potatoes rough up their surface a bit, this will help the potatoes develop the perfect crispy crust when roasting. Next add the potatoes to the hot oil, and toss the potatoes around to coat them. Then put them into the oven to roast, stirring once or twice. When the potatoes are cooked, you can sprinkle them with some fresh garlic and parmesan cheese, some salt and pepper and keep on roasting then until they are tender, turn the potatoes at least once more so they brown up evenly. When they are roasted to the way you like, toss then with a bit of fresh chopped parsley.
