Peach Cobbler Ice Cream with Bourbon-Caramel Sauce

This peach cobbler ice cream with bourbon caramel sauce is a delicious ice cream recipe that has all the flavors of traditional peach cobbler, but doesn't require an ice cream maker. You just stir the ingredients together, and freeze. Fold the whipped topping in with as few strokes as possible while making sure everything is well blended. Some of the ingredients you will need for this amazing cobbler recipe include refrigerated pie dough, cooking spray, sugar, ground cinnamon, chopped peeled peaches divided, sweetened condensed milk, peach schnapps, fresh lemon juice and salt. To start you will need to preheat the oven to 425 degrees Fahrenheit. Then to prepare the ice cream, place the pie dough on a baking sheet lined with parchment paper and lightly coat with cooking spray. Combine some sugar and cinnamon in a small bowl. Sprinkle the sugar mixture evenly over pie dough. Using a knife or pizza cutter, score dough at one inch intervals. Bake at 425° for 10 minutes or until browned. Cool completely and break into half inch pieces. Place some peaches in a medium bowl, and mash with a fork until almost smooth. Add the remaining peaches and the next 4 ingredients and stir well. Gently fold in the crumbled piecrust and whipped topping. Scoop the mixture into a freezer safe container and cover and freeze overnight.
