Peanut Butter Cheesecake Bars! Wow. You can see from the picture that this one is going to be a full out sweet. You will notice in the recipe that they say to line the pan with aluminum foil. Do you already do that for some of the items you bake? If you do not, do you look at this and wonder why bakers do it?

Well it is a kitchen tip that we will tell you about right now. For those that are not already using aluminum foil, perhaps you have made what you are hoping is a dessert that will be beautifully presented when you cut it into pieces and place it on a beautiful serving platter. How often have you tried to cut your dessert in the pan only to have it break and have crumbled corners!

Here is the tip and this is primarily for those square cake pans. What you need to do is to rip off two sheets of aluminum foil that are long enough to go up and past the sides of the cake pan. Leaving about a two inch length beyond th

e pan would be good. Now you will place one length in one direction on the pan and the second piece over the first in the opposite direction so that all four sides of the cake pan have aluminum overlapping.

Next you either spray the aluminum foil with a non-stick spray, or my favorite is just to lightly butter the surface. You pour build your dessert in the pan, and when done remove from the oven, let cool, lift the dessert out by the foil flaps. Next put this onto a cutting surface, peel the flaps back and cut into squares using a very sharp knife without any problems. This is best with square pans but if you are using a rectangular tin, you may need a second set of hands to help you to remove the dessert.

The same method applies when you are doing a no-bake dessert that is to be refrigerated before cutting.
