The ingredients you will need for this super easy pear and walnut cake recipe include all purpose flour, almond meal, baking powder, cinnamon, ground ginger, chopped walnuts, eggs, granulated sugar, buttermilk, extra virgin olive oil and Bartlett pears halved and cored. To start preheat your oven 350 degrees Fahrenheit. Lightly cover a round eight inch cake pan with non stick baking spray and dust with flour, then line the bottom of the pan with parchment paper. Next place the flour, almond meal, baking powder, baking soda, cinnamon, ground ginger and Diamond of California walnuts in a bowl and whisk until well combined. Then place the eggs and sugar into a food processor and pulse until well blended and the mixture is pale and fluffy. Add in some buttermilk and olive oil, and again, pulse until well blended and batter is thick. You can also mix the wet ingredients in a stand mixer with the whisk attachment. Fold in the dry ingredients into the wet mixture and pour the batter into cake pan. Then place the halved pears into cake.
