Pork Carnitas Nachos

During the week it can sometimes be tough to get a good meal on the table, especially when everyones schedules are so busy. This "Pork Carnitas Nachos," recipe is a great idea for having something healthy that doesn't take a lot of time to prepare.

This pork carnitas nachos recipe is colorful and uses slow cooked pork loin, brown rice, seasoned black beans, pico de gallo, jalapeņos and quest fresco to make up the delicious layers of this recipe. Some of the ingredients in this recipe include boneless pork loin, garlic, seasonings, beer, fresh lime juice, adobo sauce, brown rice, seasoned black beans, tortilla chips and toppings. To start you will make 1/2 inch deep slits on the outside of the pork and stuff with garlic, combine the seasonings in a small bowl. Next you will place the pork in a 3 1/2 quart slow cooker, and sprinkle the pork on all sides with the seasoning mixture. You will then combine the beer, chipotle chiles, lime juice and adobo sauce and pour over the pork. Cover and cook on high for six to eight hours or until the pork is tender. Remove from the slow cooker when finished and shred with two forks, and combine with 1/2 cup of the cooking liquid and toss well. Layer the tortilla chips on bottom of platter, spoon the rice and beans over the chips, add the meat and toppings and serve with lime wedges.
