Ranch Chicken Lasagna

Try out this awesome Ranch Chicken Lasagna! This recipe is both lasagna AND salad! How can you find a better combination really? When I eat the two together just on their own, I am not the type to push the two distinct flavors away from eachother, but instead let them gather together into one big mess on my plate with mixing flavors of rich and tangy. The creator of this recipe is a genius if you ask me, and has basically found a way to bring the best of both worlds together.

With both 'salad' and 'lasagna' we can have our cake and eat it too! The romaine lettuce and cherry tomatoes which are jam packed with nutrients, are then combined with the filling and satiating quality of the chicken and black olives. Then it is all topped off with some rich cheddar cheese! Delicious! When I first saw this recipe I was worried that they would bake the lettuce, which is always a no-no in my books. Lettuce is only great if it is nice and fresh and crispy, and heating it by any means causes it to become limp and tasteless. Instead, this recipe reminds me more like a taco salad recipe, which is a recipe that would be delicious to make more often as well. You can get creative and make your own ranch dressing, or your own barbecue sauce rather than store bought, and in fact a basic ranch dressing is very easy. In a food processor, just blend together 1 1/2 cups of mayo, 1/2 cup of sour cream, 1/4 cup of heavy cream, 2 Tablespoons of lemon juice, 1/2 teaspoon of garlic powder, 1/2 teaspoon of dill and salt and pepper to taste. Save whatever leftovers you do not use and keep them in an airtight container in the fridge for up to 2 weeks. Who would have thought Ranch dressing is so simple? Its always much nicer to make your own sauces and dressings at home, you can really be more aware of what is in them that way. So much of the time there is so much sodium packed into the processed foods we buy from the grocery store, just to keep them fresh for extended periods of time. But in my opinion, fresher is always better.

This is such a great casserole recipe that will be ready to eat in no time at all! You basically just layer each ingredient in the recipe on top of each other like a normal lasagna, and top it off with the cheese. What a great way to have some comfort food with some vegetables in there too. Layered salad recipes are often made for barbecues and potluck dinners, so this is kind of like a layered salad too. This would be sure to be a crowd pleaser of a meal for sure, and you would be busy sharing the recipe with every one after they were finished trying it out. Lasagne has been around a very long time, and in fact, so have casserole recipes. In ancient times, lasagne was simply the long fat noodles we know and love today, it wasn't until later on that people stacked meat and vegetables and cheese in between layers of these noodles, and called it a lasagne dish. The same goes for the casserole, back in the day, a casserole was just the dish people used to make food in, and now, we have an entire category that is dedicated to these kinds of recipes made in a casserole dish.
