Then cook the pancetta in a large frying pan over medium-high heat three minutes. Then add the onion and garlic, and saut� for about 3 minutes or until the onion is tender. Add the sausage, and saut� about 5 minutes or until the meat is no longer pink. Add the wine, and cook some more. Stir in the tomatoes and the next three ingredients. Reduce the heat to low, and cook, stirring occasionally, another three minutes. Then stir in the ricotta and some mozzarella cheese into the hot cooked pasta. Then lightly grease a 13 by 9-inch baking pan with some non-stick cooking spray. Transfer the pasta mixture to a prepared dish, and top with the sausage mixture. Sprinkle with some Parmesan cheese and the rest of the mozzarella cheese. Bake at 350 degrees Fahrenheit for 25 to 30 minutes or until bubbly.
