Finding a healthy salad dressing can sometimes be challenging. More often the not if you take a look at the ingredients list of what claims to be low-in-fat or organic or my favorite claim, 'natural', you're likely to see a few items that you may just not even be able to pronounce. Yikes. And aside from those hard to pronounce ingredients, store-bought salad dressings are often loaded with white sugar, use poor quality oils and pumped with artificial flavorings. Shall I go on?

I think it's fair to say that homemade salad dressings are the way to go! Just grab an emptied glass bottle or if you're like me a have more than you like to admit of those artisan mason jars, all organized in your cupboards...well, those will do the trick just fine!!

Most dressings are simple � an oil, a vinegar or acid, and seasoning! Really! Its that simple!! But today, what I'm going to share with you is this great recent find � red onion dressing. Oh my goodness is it ever good! And good for you!

Red onions are a great ingredient that offers not only a wonderful flavor profile but is packed with amazing phytonutrients � nutrients found in plants � which include quercetin, allicin and chromium. These are are known protect us against all sorts of illness and disease including cancer, they help fight off fungi and bacteria, promote cardiovascular health, reduce high blood pressure and insulin resistance, and aid in weight loss. Amazing right? Red onions are also low on the glycemic index scale � so for all of you who are on a low carb load diet or watching your waistlines � this is a great veggie to use more of. And believe it or now, red onions actually provide significant amounts of vitamin C and vitamin B6! Who would have ever thought, but isn't that absolutely fabulous?

This dressing is full of wonderful flavor and goes with just about anything. You can toss some mixed baby greens with a splash of this dressing, top it up with some roasted nuts and seeds or try something like a Greek salad - cucumbers, tomatoes, olives, some nice fresh feta. This red onion salad dressing is delicious and easy to do, if you don't have a food processor you can also use a mason jar, add your ingredients and shake them up! The ingredients you will need for this salad dressing recipe include roughly chopped red onion, minced garlic, sugar, salt, fresh ground pepper, celery seed, Dijon mustard, vinegar and vegetable or olive oil. It really is as simple as combining all the ingredients in a food processor and processing until the desired consistency is achieved.
