Breakfast has always been deemed the most important meal of the day, and it truly is, because this is when your body is just coming out of 8 or more hours of having no food, and so naturally you should fuel your body well after that long without anything to eat. The main reason though is to fuel your brain and get your body nourished and ready for the day ahead. You may have also heard that it sets your metabolism for the day, and this is also true. If you don't have breakfast in the morning, you may be more prone to eating something more unhealthy come lunch time because you will be so hungry and your body gets really messed up if it's too hungry! So feed your body right and try out these great breakfast egg muffins!

This is such a great quick and easy breakfast idea. Stuffing is the ultimate comfort food, and combined with eggs they make the best idea. The good thing about this savory egg muffin recipe is that it can be prepared the night before, then when you are ready to have it just put it into the toaster and you are ready to go.

This egg muffin recipe uses the easy to make Stove Top lower sodium stuffing mix for chicken to give it a nice savory flavor. The recipe also needs some pork sausage, beaten eggs, shredded Jack Cheese and some finely chopped red bell pepper. Start by preheating your oven to 400 degrees Fahrenheit. Then bring some water and butter to a boil in a medium pot, and stir in the stuffing mix, then cover and remove the stuffing from the heat and let stand till soft, afterwards fluffing with a fork. There is just something about stuffing that makes your mouth start to water.

While you wait for the stuffing to cool you can begin to cook your sausage in a small pan until browned, stirring to crumble, and later draining away the grease. Now coat your fingers with some non stick cooking spray, this is so you can press some of the stuffing into the bottom and sides of some muffin cups that have been heavily sprayed with non stick cooking spray. Now you can pour the egg mixture into the delicious cups made of stuffing. Layer the shredded cheese, sausage and whatever veggies you use on top. You can also use green onions if you'd like. In a preheated 400 degree Fahrenheit oven bake the savory egg muffins for approximately 18 to 20 minutes or until the centres of the eggs are set. After the stuffing cups are finished cooking, let them stand for about five minutes before you serve them. Use a sharp knife around the edges to remove them from the muffin pan, which should be quite easy from the non stick cooking spray.
