Sicilian Lemon Ricotta Cheesecake

Who doesn't love cheesecake? This is an amazing sounding Sicilian Lemon Ricotta Cheesecake that you will just have to make, just to try it out. A user on the awesome Cooking with Nonna website added this recipe for a lemon cheesecake because her husband's family is from Sicily where lemons grow like crazy, so she came up with this to use some of them for a great dessert. If you like lemons, you will love this one! With the ricotta cheese it would be nice and light and then with the lemon curd on top, it would just be so perfect. I am dreaming of trying some right now.

For this cheesecake you still use the cream cheese as you would for a regular cheese cake but you also add in 2 packages of ricotta so I imagine it would be a little bit of a different flavour. I think this would be a nice light and fresh tasting dessert great for a warm summer day, nice and chilled from the fridge. The writer of the recipe also suggests cutting the cheese cake with un flavoured dental floss, which would be such an awesome idea. One of those, why didn't I think of that before tips!
