With a name like Snickers Cheesecake Bars, you just know this dessert recipe is going to be good. The combination of the popular chocolate bar and cheesecake sounds almost too good to be true. Snickers bars are full of peanuts, caramel, nougat and chocolate. The crust of this cheesecake recipe is made from processing Oreo cookies in your food processor, until they are fine crumbs, or you can get the same effect by using a sealable bag and putting the Oreo cookies in and crushing them up with a rolling pin. Then put the ground up Oreo cookies into a bowl, and add some melted butter in, and stir until well combined. Then you are going to pour the crumb mixture into an 8-inch by an 8-inch baking dish that has been lined with aluminum foil. You can use non-stick foil, or if you are using regular aluminum foil, you can spray with some non-stick cooking spray. Then press the cookie crumbs down, and bake in a preheated 350-degree oven for approximately 9 or 10 minutes.

While you are waiting for the crust recipe to bake. One of the ingredients you will need for this Snickers Cheesecake bar recipe is cut up Snickers bars. In the bowl of a stand mixer, you can put in some room temperature cream cheese, egg, some vanilla extract, and some sugar. Then blend until the mixture is nice, smooth, creamy and there are no cream cheese chunks remaining. You can also use a hand mixer if that's what you have. Then you can stir into the cheesecake mix some chocolate chips and the cut up Snickers bars (make sure to save some of the cut up Snickers bars to sprinkle on top of the cheesecake bars). Now fold in the chocolate chips and the cut up Snickers bars into the cheesecake mixture. Be gentle so you don't break up the chocolate bar pieces. At this point of the recipe preparation, the cream cheese and the chocolate chips and the cut up Snickers bars are looking beyond irresistible, you'll have to keep yourself from eating it!

Then spread the cream cheese mixture of the bar recipe on top of the baked Oreo cookie crust. Spreading the cheesecake mixture evenly around. Then you are ready to bake the cheesecake. A trick you can use to keep the top of the cheesecake recipe from cracking on top while baking is to place the cheesecake pan, inside of another baking dish, which has been filled with hot water. Or you can put another baking dish in the oven that also has warm water inside of it. The oven should be preheated to 350 degrees Fahrenheit. Then bake for approximately 35 minutes. You know when it is properly baked when you can touch the top of the cheesecake and it feels set. The edges may start to brown at this point; this is when you know it's done baking. Using the water in the baking pan, helped with the cheesecake having barely any cracks on top, only a few, which may also be caused by overbaking by a bit. Then let the cheesecake cool, on top of the oven in the water bath for about an hour.
