The cookie dough uses pumpkin in it to make a cake like batter and the pumpkin also adds some extra moisture in the cookies to make them nice and soft.

They are almost cake like in texture, but a little denser too. These are perfect for fall time to use up some pumpkin meat if you have an abundance of pumpkins growing in your garden!
