Strawberry Cheesecake Pops

It was first conceptualized in 1923 by Frank Epperson, who was from Oakland, California. This cool, sweet treat was first known as “frozen ice on a stick.” Epperson later sold this idea to a known popsicle business called Joe Lowe Company in New York.
Moreover, there was a theory stating that Epperson said he first discovered this now famous ice pop back in 1905 when he was only 11. What happened was he accidentally had some powdered soda and a mixing stick left in a glass one cold evening. Nevertheless, the ice pops that we all love has been there for about a century and the love for them never gets old.

Some of the ingredients you will need for this strawberry cheesecake recipe include evaporated low fat milk, sugar, softened cream cheese (low fat), low fat Greek yogurt, vanilla extract and some light colored corn syrup. You will also need some lemon juice, hulled strawberries, and graham cracker crumbs.
To start combine the milk and sugar in a saucepan over medium heat and cook for a few minutes. Then place the softened cream cheese in a medium bowl and gradually add the milk mixture, whisking until smooth. Then stir in the Greek yogurt and vanilla and cool completely. Then place the corn syrup, juice and strawberries in a blender and process until smooth. Pour into an ice pop old, and top with the strawberry mixture, then with the cream cheese mixture. Stir the two with a skewer, and freeze until solid (approximately four hours). When you take the strawberry cheesecake pops out of their molds, you can dip them in some graham cracker crumbs.
